What counts as waste in a restaurant?

Waste is any product that doesn't end up as a sale. It includes out-of-date or spoiled stock, prep waste (peelings, trimmings), dishes sent back, kitchen mistakes, staff theft and food left unserved at buffets. Keeping waste under control is essential to running a profitable business.

What's an acceptable waste percentage?

It depends on the type of venue. In a well-run restaurant, total waste should be between 2% and 5% of food purchases. Buffets and hotels can see 8-12%. Above those levels there's real room for improvement.

How does this template help reduce waste?

The template lets you: 1) Record every item of waste with the date, product, quantity and cause, 2) Calculate what the waste is really costing you, 3) Spot patterns (which products, which days, which causes), 4) Build an action plan based on data. What isn't measured can't be improved.

How often should I record waste?

We recommend recording waste every day, ideally when the kitchen closes. The template includes a quick daily log and an automatic weekly and monthly summary. Just 30 days of consistent records will reveal clear patterns to act on.

Does the template distinguish between types of waste?

Yes. It sorts waste into categories: expired, spoiled, prep, kitchen mistakes, returns from the floor, buffet and other. Each category calls for different corrective action, and the template suggests an action plan for each one.
