What is a kitchen prep sheet and what is it for?

It is the working document the kitchen uses to plan which preparations must be ready before service, in what quantity, by what time and who is doing them. It helps coordinate mise en place, get ahead of demand and cut down on improvisation, internal stock-outs and idle time in the middle of the rush.

How is it different from a recipe costing card?

A recipe costing card sets out how a dish is made and what it costs. The prep sheet turns that into the day’s work: which bases, sauces, garnishes or advance preparations you need to make today, how much and for which service. They work together: one standardises the recipe, the other organises the day.

How do I work out how much to prepare?

The template has columns for bookings, estimated sales based on past trading, a safety margin and the final quantity to prepare. That way you match prep to expected demand rather than cooking by instinct. If you run a set lunch menu or a buffet you can also base it on expected covers.

Does it work for hotels, cafés or catering too?

Yes. In hotels it helps separate prep for breakfast, buffet, room service and events. In cafés it covers pastries, sandwiches, bases and restocking the display counter. In catering it is useful for planning advance prep, loading, regeneration and dispatch per event. The layout adapts to different ways of working.
